Fumaric acid is trans-butenedioic acid, C4H4O4, CAS 110-17-8: a white crystalline food acidulant with food additive code E297 and the trans isomer of maleic acid. Food Grade fumaric acid is specified at 99.50 wt % assay minimum on a dry basis, with maleic acid at 0.05 wt % maximum, arsenic at 1 ppm maximum and lead at 2 ppm maximum, per the manufacturer's CoA (FCC 14).

General knowledge: maleic acid is the cis isomer of fumaric acid, so it is the characteristic related impurity and the reason the maleic acid line matters on a food-acid CoA. Fumaric acid also dissolves slowly in water compared with most food acids, which is why it is often chosen for dry blends rather than clear liquids.

Fumaric acid is used as a food-grade acidulant (E297) to set and regulate acidity in food and beverage formulations. SPC supplies it as chemicals for food manufacturers.

Fumaric acid and maleic acid are cis-trans isomers with the same formula, C4H4O4. Against citric, malic and tartaric acid, fumaric acid is the slow-dissolving one: our TDS gives 0.7 g/100 ml at 30 °C.

The only SPC-specific figure in this table is the 0.7 g/100 ml solubility and the 0.05 wt % maleic acid limit from our TDS. Everything else is general knowledge or simple arithmetic and is not an SPC specification. Malic acid and tartaric acid are general knowledge only: they are not products supplied by SPC. The equivalent weight column is computed (molecular weight divided by the number of acidic groups, rounded) to show how much acid by weight delivers the same number of acidic groups; it does not predict taste.
